Sesame oil is traded at a higher price in the edible oil market compared to other vegetable oils. This has resulted in serious issues of adulteration, such as mixing sesame oil with cheaper vegetable oils or falsifying the country of origin. To address the issue of adulteration, we profiled the fatty acids of four types of sesame oil available in the market by analyzing them as Fatty Acid Methyl Esters (FAMEs). The fatty
acids were extracted using diethyl ether and petroleum ether and were
methylated using 2 M KOH in MeOH. The analysis was conducted using a Shimadzu
GCMS-TQ8050NX. The analysis detected ten types of fatty acids, including
linoleic acid and oleic acid, and their compositions were verified. Additionally,
we plan to profile the metabolites and phytosterols of vegetable oils to
further identify cases of sesame oil adulteration.
