Polyphenols represent one of the most well-known bioactive compounds exhibiting antioxidative, antimicrobial, immunomodulatory, and anticancer activities and have been applied to various healthcare and wellness food industries. Pear and pear peel contain diverse polyphenol classes, and it is crucial to analyze content changes with food processing methods and techniques. In this study, we used methanol:water 70:30 (v:v) solvents in the extraction of the major 9 polyphenol compounds (arbutin, (+)-catechin, chlorogenic acid, gallic acid, quinic acid, isorhamnetin-3-O-rutinoside, kaempferol-3-O-glucoside, myricitrin and rutin) that show various polarity in pear and pear peel, and quantified using ultra-high performance liquid chromatography coupled with electrospray ionization quadrupole ion trap mass spectrometry (UPLC-Q TRAP-MS/MS). |
