Sesame (Sesamum indicum L.) is a major oilseed crop rich in nutrients. This study compared the chemical profiles of sesame oils from Korea, China, and India, focusing on roasted vs. unroasted seeds. Using GC×GC-HRMS, distinct volatile organic compound (VOC) patterns were found. PCA classified oils by roasting and origin, supporting traceability and quality control. |
